MOMMY’S LUNCH IS SERVED! And it was oh so yummy (and healthy)!
Before babies I went out to lunch with co-workers. Today, after I put the twins down for a nap I realize I’m starving, grab the first thing I see and shove it in my mouth…usually carb snacks like crackers or muffins. NOT WHAT I NEED!
I finally said “NO MORE” and started planning ahead. I don’t make my “kid-free” lunch from scratch (it’s the only time I have to myself and I’ll be starting on dinner soon) so I need something ready-made, healthy and quick. It’s not easy to find affordable, frozen meals made with organic ingredients. That’s why I’m so excited about Healthy Choice Simple Cafe Steamers.

Okay. Drum roll please….my favorite recipe is…..the Three Cheese Tortellini with the Unwrapped Burrito Bowl in a close second. The photo review above shows me preparing the Tortellini. Skip to Step 5 below and check out the meal I enjoyed! The Three Cheese Tortellini exceeds expectations for a tangy, yummy sauce paired with cheesy, filling pasta. Perfect for days when I need a hug.

The next photo is me preparing the Unwrapped Burrito Bowl. The fire roasted corn adds the perfect kick to one of my all-time flavor combos. Rice and beans is the perfect food to fuel up on – the kids will be awake soon!

Step 4: Smother with the delicious sauce
Having eaten many a frozen meal over the years I can’t tell you how impressed I am with these Cafe Steamer meals. The difference the steam cooking makes is huge and I love being able to pour the sauce over the entree.
Another benefit of these steamer bowls is that you have the option of eating right out of the bowl. Just add what’s in the steamer basket to the bowl and stir. I didn’t do that today because I wanted pretty pictures for you but I don’t always serve them on a plate. Sometimes eating right out of the steamer bowl works just fine for me.

*BONUS* Kid Craft Project
For all you crafty mommas here’s one more upside to the disposable steamer basket & bowl. Yes it’s what makes this meal so delicious and because I’m a bit of a nut when it comes to reusing things for craft projects…I couldn’t help but see the potential. I up-cycled the plastic bowl & steamer basket so that Mommy had an art project ready to go when the kiddos woke up from their nap! The steamer basket & bowl made a perfect paint palette! We also used the basket as a stamper to create a flower-like pattern. And as always…something they’ve never seen before offers an engaging twist for any activity. Mommy nurtured the kiddos and took care of herself….a truly perfect day.
