Rice Krispies Snow Balls are “a Hit” (Recipe & $100 Visa Gift Card Giveaway!) – Closed

Recently, Rice Krispies challenged some mom bloggers including me, to think up some Rice Krispies recipes that would be “show stoppers” at any holiday party”. I am not one to back down to a challenge so my mind started to think…

Rice Krispie treats are my go to treat for most get togethers since they are so simple and quick. Since I am not much of a baker, I love Rice Krispies Treats for obvious reason. No oven is involved and they take no time at all! I was excited to try and take them to another level to stop my guests in their tracks.

Be warned: This is a fun yet messy recipe! Kids can easily get involved and have a ton of fun!

Here is the recipe I came up with – (keep in mind that making something that is actually edible is HUGE in my book):

Rice Krispies Snowballs

  • 3 tablespoons   butter or margarine
  • 1 package (10 oz., about 40)   regular marshmallows – OR – 4 cups   miniature marshmallows
  • 6 cups   Rice Krispies®
  • 1-2 bags of White Chocolate Chips
  • Bag of Shredded Coconut

Directions:

1. In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.

2. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated.

3. Then using your hands coated with either cooking spray or butter form as many “snowballs” as you can with the Rice Krispies mixture. I made about 10 and then used the rest of the mixture to make regular treats for the family members who do not enjoy coconut. The size of the “snowballs” is absolutely up to you.

4. Let the Snowballs cool for at least an hour.

5. This is where it gets messy! Melt your white chocolate chips in the microwave at medium heat at 30 second increments, stirring in between each 30 sec. increment until they are completely melted. Quickly dip each of your snowballs in the white chocolate and place them back on the baking sheet.

6. Immediately or within a few minutes after dipping them in chocolate, get a Ziploc bag filled with shredded coconut to coat your snowball with “snow”. Place one “snowball” in at a time and shake them in the coconut. Place back on the baking sheet and into the fridge.

7. Let them harden and Voila! Yum!
