6 Ingredient Crab Stuffed Mushrooms

Ingredients:

2  (8 oz.) packages of fresh button mushrooms

Stuffing Ingredients:

2 ( 7 oz.) cans crabmeat
1 cup mayonnaise
1/2 cup shredded parmesan cheese
2 tablespoons green onions, chopped fine
2 tablespoons of butter


Directions:

  • Clean mushrooms and remove stems.  Using a spoon, hollow out the the insides of the mushrooms.
  • Simmer mushrooms in butter for about 2-3 minutes on each side of the mushroom.
  • PREHEAT OVEN TO 500 DEGREES.
  • Mix stuffing ingredients from the list above. Season to taste – I use salt, pepper and oregano.  With a spoon, fill each mushroom until full.
  • Bake mushrooms in a large casserole dish for 5 minutes.
  • Broil mushrooms for 5 minutes until bubbly.

Simple right!

    Seasoned Salmon Fillet

    4 fillets (~5-6 ounce) fillet salmon
    1/10 teaspoon salt
    1/10 ground cayenne pepper
    5 slices of lemon
    2 tbspn olive oil
    2 tbspn capers

    Directions:

    1) Begin preheating a large skillet for 3 minutes (medium ~ medium-high heat)
    2) After coating the fillet with olive oil, put it in the skillet. Turn up the heat to high and continue cooking for 3 or 4 minutes. Sprinkle with salt, pepper and capers. Then turn the salmon over and cook for 4-5 more minutes, or until browned. You might want to manually by seeing whether or not it flakes easily with a fork.
    3) Put the fillet pieces onto the plates! Serve with the lemon.

    this is my favorite recipe after Thanksgiving:

    Leftover Turkey Casserole
    Cook Time: 30 minutes

    Ingredients:

    Four cups prepared turkey stuffing
    Two cups cooked cut up or sliced turkey
    1 3/4 to two cups prepared turkey gravy
    1/3 cup jellied or whole cranberry sauce, cubed

    Preparation:
    Butter bottom and sides of 2-quart baking dish. Arrange half of the stuffing in bottom of dish. Add half of the turkey then half of the gravy. Repeat layers. Top with cubes of cranberry sauce. Bake at 350° for 30 minutes.
    Serves 4.

    I LOVE this casserole!

    Italian Casserole

    8 oz uncooked wheel-shaped (or other shape) macaroni (about 3-1/2 cups)
    8 oz. bulk turkey Italian sausage
    1 4-oz. can mushrooms, stems & pieces, drained
    1/4 c. sliced ripe olives (I prefer black, but you can use green if you’d like)
    2-3/4 c. meatless spaghetti sauce
    1 c. shredded fat-free or part skim Mozzarella Cheese

    Heat oven to 350. Cook macaroni as directed on package and drain. Cook sausage in skillet, stirring frequently, until no longer pink; drain. Miz macaroni, sausage and remaining ingredients (except cheese) in ungreased 2-1/2 qt. casserole.

    Cover and bake about 30 minutes or until hot. Sprinkle with cheese. Let stand 5 minutes or until cheese is melted. Serves 6

    Easy Glazed Chicken

    Ingredients:
    8 Chicken durmsticks, (skin on)
    1 Cup Water
    1/2 Cup Balsamic Vinegar
    1/3 Cup Soy Sauce
    2 1/2 Tablespoons Sugar
    1 Garlic Clove, peeled and bruised
    Directions:
    Place all ingredients in saucepan on high heat.

    Bring to a boil, then reduce to a simmer for about 20 minutes.
    Remove any scum that rises to the surface.

    Increase the heat, turning the drumsticks frequently in the liquid, and cook until the liquid has reduced to a sticky glaze.

    Arrange the chicken on a serving platter, remove the garlic clove from the liquid , and spoon the glaze over.

    NOTE It’s a glaze rather than a sauce, so there’s not a whole lot of it.

    This is a very yummy recipe and so simple to make!

    Easy Spinach Lasagna Rolls

    serves 6
    prep time approximately 25 minutes

    Ingredients:
    4 oz. Cream Cheese, softened
    1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
    1-1/4 cups Shredded Mozzarella Cheese, divided
    1/4 cup Grated Parmesan Cheese
    6 lasagna noodles, cooked, drained
    2 cups spaghetti sauce

    Directions:
    Heat oven to 375ºF. Mix cream cheese, spinach, 1 cup mozzarella and Parmesan until blended. Spread a thin layer of mixture onto noodles. Roll up tightly.

    In a 9-inch sq. baking dish, place rolls seam down. Top with spaghetti sauce and remaining cheese.

    Bake 30 min. or until cheese is completely melted and thoroughly heated.

    Amazing Fruit Salad -

    1 small container cool whip
    1/3 of a large size vanilla yogurt
    1 small package vanilla instant pudding
    1 can madarin oranges
    1 cup fresh raspberries
    1 cup sliced bananas or blue berries

    beat together cool whip, yougurt, and vanilla pudding
    fold in fruit. Chill and serve!

    I have been making this for years!

    Skillet Parmesan Cheese

    Ingredients:
    4 medium sized chicken breasts (skinless/boneless)
    1 jar of regular/tradional speghetti sauce or marinara
    1 cup of panko bread crumbs
    1 cup of parmesan cheese, split
    1/2 a box of speghetti noodles
    2 eggs, beaten

    First, I boil some water in a pot for the speghetti noodles.
    Next, I beat the eggs and set them aside in a small bowl.
    Next, mix together the 1 cup of panko crumbs and 3/4 of the cup of parmesan cheese together.
    Next, coat the chicken breats in the beaten egg mix and dip the chicken breats into the panko/parmesan mix.
    Immediatly, place chicken into hot skillet.
    Once the chicken is browned on both sides and juices run clear.
    Add the remaining parmesan chicken to the top of the breasts.
    Then pour the speghetti sauce/marinara in the skillet and let the sauce warm up.
    Lastly, place the drained speghetti noodles on a plate and top with a chicken breast and some sauce.
    Viola!

    Yummy!

    CHEDDAR SHEPARDS PIE

    1 can (10 oz) Condensed Cheddar Cheese Soup
    3 cups hot mashed potatoes
    1 pound ground beef
    2 cups frozen mixed vegetables
    1/4 teaspoon ground black pepper
    1/8 teaspoon salt

    Prepare topping by combining 1/2 can condensed soup with hot mashed potatoes; set aside. In fry pan, brown ground beef at medium-high heat until cooked through. Drain fat.

    cook mixed vegetables according to package directions; add to fry pan and stir into beef with remaining soup, pepper. Spoon meat mixture into 8 x 8 x 2 in. square baking pan. Spread reserved potato mixture evenly over surface. Bake at 400 F for 20 minutes or until topping is light golden.

    Baked Ribs and Sauerkraut

    3# Country Style Ribs
    4 c drained sauerkraut
    2 Tart apples, peeled and chopped
    1 small onion, chopped
    1/4 c water
    2 T brown sugar

    Preheat oven to 350 degrees
    Cut ribs into serving pieces. In a large frying pan, brown ribs: drain excess fat.
    In a 13×9 pan, combine sauerkraut, apples, onion, water and brown sugar.
    Arrange ribs on top; bake 1 1/2 to 2 hours. uncovered or until ribs are tender, Stirring occasionally

    Granola Raspberry Parfait

    1 – 1/2 cup low-fat ricotta
    1/4 cup low-fat plain yogurt
    4 to 5 tablespoons raspberry jam; depending on desired sweetness
    ( if you substitute another fruit use the jam that the same as the fruit )
    1 teaspoon grated orange peel
    1 to 1 – 1/4 pounds raspberries
    1 – 1/2 cups Granola

    Puree ricotta, yogurt and jam in a food processor. Stir in grated orange peel.

    Spoon in 2 tablespoons granola into each of the 6″ tall parfait glasses. Top with 2 tablespoons of ricotta mixture and a thick layer of raspberries. Repeat with a second layer of granola, ricotta and raspberries.

    Serve immediately or refrigerate for up to 6 hours.

    Makes 6 servings

    BAKED HAM with LEMON – SPICE GLAZE

    1 cooked, bone-in-half-ham the shank or butt (6 to 7 lbs)
    3/4 cup packed light brown sugar
    Finely shredded zest and juice of 5 medium lemons
    1 – 1/4 teaspoons ground ginger

    Preheat oven to 350. Cut off tough, leatherlike skin from ham (if it has it) and score fat and meat in a crosshatch pattern. Put ham, fat side up, in a large roasting pan and tent loosely with foil. Bake until a thermometer in thickest part of meat reaches 120, about 1 – 1/2 hours.

    Meanwhile, make glaze: In a bowl, whisk sugar, zest, juice and ginger until smooth.

    Uncover ham and pour glaze over it into pan. Bake ham, uncovered, basting ham and stirring glaze every 10 minutes, until glaze is a thickened, shiny syrup and thermometer in meat reaches 135 to 140, 15 to 30 minutes.

    Let ham rest 5 minutes, then brush with glaze and transfer to a cutting board. Scrape remaining glaze into a small bowl. Carve ham and spoon more glaze on top.

    YIELD: Serves 8, with ample leftovers

    Parmesan cheese artichoke dip

    1 cup Parmesan cheese – grated
    1 cup mayonnaise
    1 can artichoke hearts, drained and chopped
    Tiny bit of garlic powder
    2 tablespoons finely chopped green onion

    Crackers for dipping

    Mix mayonnaise, artichokes, parmesan cheese, and garlic powder. Spread mixture in a baking pan. Bake at 350° for about 20-25 minutes, or until the top is browned lightly. Top with the green onion. Serve with crackers, tortilla chips, or French bread (a favorite of mine).

    BEEF HASH

    2 LBS. beef stew meat
    4 small onions
    1 cup cornmeal
    1 small box saltine crackers

    cover beef with water and simmer. Cut meat into small pieces when done. Add chopped onions corn meal and crackers. Simmer until done. 3/4 cup of rice may be substitude for cornmeal.

  14. *Fire House BBQ Chicken Sandwich*
    This recipe is a favorite from my father-in-laws firestation!

    Ingredients-

    1.Chicken breast
    2.Onion Buns
    3.BBQ sauce
    4.Bacon
    5.Pepper Jack Cheese
    6.Red Onion

    *Marinate your chicken breast in your bbq sauce & put it on the grill (reserve some sauce for later)
    *Cook your bacon
    *Add Pepper Jack cheese to chicken just before you take it off the grill. Make sure it melts enough to coat the chicken.
    *Grill your Onion Buns just enough to warm them up.
    *Put your chicken on the buns and layer on bacon and red onion. You can also add more of your reserved bbq sauce!

    Very yummy and perfect for an evening grill out :) I hope you enjoy!

    Beef goulash
    1 lb lean ground round
    one large yellow onion chopped
    3 15 oz. cans choped tomatoes with juice
    1 can tomato sauce
    2 cups cooked elbow macaroni
    salt and pepper to taste
    1 tablespoon sugar
    1 teas. basil
    brown hambuger and onion in little olive oil
    add tomatoes and tomato sauce, seasonings let simmer for 30 minutes
    turn down to low and add cooked macaroni let simmer for 10 minutes
    then serve with garnishes such as sour cream or chedddar cheese

    3) Order 3 Happy Meals
    4) Clarify 1 “boy” toy and 2 “girl” toys ( crucial, must be followed exactly)
    5) Distribute Accordingly

    6 large eggs
    1 1/2 cups milk
    1 teaspoon chicken grill seasoning, Creole seasoning, or a seasoned salt mixture
    3 slices bread, torn in small pieces
    12 ounces chicken smoked sausage, your favorite flavors
    1 cup sharp Cheddar cheese
    Preparation:

    Grease a 2-quart baking dish or spray with nonstick cooking spray.
    Whisk together the eggs, milk, and seasoning.

    Arrange bread pieces in the baking dish; top with the sliced sausage then cheese. Bake at 400 until knife inserted comes out clean

    Beef Tenderloin with Merchant de Vin Sauce

    1 beef tenderlion
    2 c red cooking wine
    1 minced shallot
    1 c beef stock
    1 tbs parsley flakes
    1/2 lbs unsalted butter at room temparture cut into chunks

    Broil beef tenderloin to desired doneness

    Merchand de Vin Sauce:

    Simmer shallots and wine in large pan on stove top until reduced
    Add beef stock and continue to reduce
    Fold in butter and parsley and whip until blended thoroughly

    Pour sauce over beef tenderloin and serve. (For added treat, also serve with wild rice drenched in sauce.)

    1 package (18 ounces) refrigerated chocolate chip cookie dough
    1 jar (7 ounces) marshmallow creme
    1/2 cup creamy peanut butter
    1‑1/2 cups toasted corn cereal

    Ingredients:

    2 Cucumbers (chop into 1/4′s or slice thinnly)
    2 packages of Cherry Tomoatoes (slice all into halves)
    1/2 cup chopped Cilantro
    2 cups Fetta Cheese crumbles
    1 cup lemon juice

    I just take the chopped or sliced cucumbers, sliced cherry tomatoes, cilantro, fetta, and lemon juice and just mix it all into a large salad bowl creating a refreshing and delicious salad to serve along with any meal.
    The best part about it is that It seriously only takes ten minutes to make and it’s always a hit!
